Ingredients :

flour – 3 cups
Rolling flour – 1/2 cup
baking powder – 1 teaspoon
salt – ½ teaspoon
melted butter (margarine as a last resort) – 1 cup
sugar – 1 ½ cup
eggs – 2 eggs
vanilla extract – 2 teaspoons

Preparation

1 Sift together the flour (3 cups), baking powder and salt, set aside.

2 In a large bowl, mix together the softened margarine and sugar until the mixture is light and fluffy. Add the eggs one at a time, then add the vanilla.

3 Gradually incorporate the sifted ingredients until fully incorporated. Cover the dough and chill in a cool place for 2 hours.

4 Preheat the oven to 170 degrees C. Grease the baking trays for the biscuits.

On a clean, floured surface (1/2 cup is fine), roll out small portions of the chilled dough. Using moulds, make shaped biscuits.

5 Bake in the preheated oven for 6-8 minutes or until the edges are golden brown. Remove from the pans to allow the biscuits to cool.

6 Decorate the cooled biscuits to your liking. The New Year is almost upon us and I have made some New Year biscuits.
